Creamy pasta with bell bell pepper and prawns

Ingredients

  • 200 gr spelt pasta
  • 1 ripe avocado
  • 1/2 lemon
  • handful of fresh basil
  • 2 hands garlic prawns (e.g. from the freezer)
  • 2 bell peppers in different colors
  • handful of pine nuts
  • 50 gr. cheese (e.g. Parmesan)
  • 1 tsp. Italian herbs
  • olive oil
  • salt & pepper

Creamy pasta with bell bell pepper and prawns

    1. Kook The pasta in plenty of water al dente.
    2. Halve the avocado, spoon it out and put the contents in the food processor or finely chop it. 
    3. Add the basil, the juice of the half lemon, the grated cheese, Italian herbs and pepper and salt and let the machine run until a creamy healed.
    4. Now add the olive oil in dashes until the sauce has the desired thickness. You will have about 3 tbsp. need.
    5. At the end you add pine nuts and let the machine run for a while, so that the seeds go through but stay a bit whole.
    6. Wash the peppers and cut them into very small strips.
    7. Bake the prawns in the frying pan with a dash of oil. If all goes well, the pasta is now cooked. Drain it and add the avocadom mixture.
    8. Also stir the pepper and taste whether it needs some Italian herbs or pepper and salt.
    9. Spoon the pasta on the plates and place the shrimp on it.
    10. Possibly finish with some basil and cheese leaves.
