When I saw these rice cake bars with chocolate passed by a fellow blogger, I had to try them too. I love healthy recipes that can somewhat replace an unhealthy snack. I've already made healthier versions of Lions, Snickers and Bounty's. So these bars, which look a bit like a Lion with Kitkat, fit nicely into that list.

Rice cake bars with chocolate

These rice cake bars with chocolate are a quick and easy snack on the go. Crumble rice cakes and chop nuts. Melt coconut oil and mix with cocoa powder and honey, then stir into the rice wafer and nut mixture. Press the mixture into a baking tin, let it set in the refrigerator for an hour, then cut into bars. Ideal to take with you and delicious as a healthy snack!

Ingredients

  • 2 rice cakes
  • 1 large handful of mixed nuts
  • 2 tablespoons coconut oil
  • 2 large tablespoons of honey
  • 2 tablespoons cocoa powder

How do you make rice cakes with chocolate?

    1. Crumble the rice cakes in small pieces and also chop the nuts into pieces. Put this in a mixing bowl.
    2. Melt the coconut oil in a pan and then stir in the cocoa powder and honey. Then add this mixture to the rice cakes and scoop well with a spoon so that everything is covered.
    3. Put one baking dish Or square baking tin ready, covered with aluminum or household foil.
    4. Divide the rice cake mixture over the baking tin (about half full) or muesli form and press well, so that the strips will not fall apart. Cover the dish with foil and put in the fridge for about an hour.
    5. After an hour, cut the chocolate rack bars with a sharp knife into 5 pieces. Pack per piece and keep them in the fridge.
