If I tell you I've wanted to make this recipe for a year, will you believe me? Really, I'm such a sucker for cookie dough, but of course, cookie dough is really only safe to eat "raw" if there are no eggs in it. So here's my fabulous recipe for raw chocolate chip cookie dough balls, gluten free, vegan, dairy free and totally ok to just pop into your mouth unbaked. More than ok, because they are TASTY!

Raw chocolate chip cookie dough balls

These cookie dough balls are perfect for coffee or tea. Gluten free and vegan! If you love cookie dough, this is the recipe for you!

Ingredients

  • 100 grams of almond flour
  • 50 grams of rice flour
  • 40 ml water
  • 30 g melted (liquid) coconut oil
  • 40 grams of coconut blossom sugar
  • 2 teaspoons vanilla extract
  • 20 grams of dark chocolate chopped into pieces
  • 60 grams of dark chocolate, melted

Raw chocolate chip cookie dough balls

    1. Mix the almond flour, rice flour, coconut blossom sugar and pieces of chocolate. Add the water, coconut oil and vanilla extra and mix with a dough mixer or knead by hand into a nice dough. Let this dough stand in the fridge for half an hour.
    2. Melt the remaining chocolate. Roll small balls from the dough and baptize them, for example with the help of a spoon, in the melted chocolate until they are completely covered with a layer of chocolate. Let them "drain" on a baking paper and put them in the fridge so that the chocolate can harden.
    3. Just before serving, remove from the fridge so that they can get a bit up to temperature. Store them in an airtight container.
