There is less and less meat on the table here at home. On weekdays kook and that means I also decide what goes on the table. The last few weeks we have been eating vegetarian 4 to 5 nights a week and we like it a lot. This vegetarian and delicious nacho dish from the oven is on the menu as comfort food. Not méga healthy, but with more vegetables than your average snack meal. Hmm!

Nacho dish

The vegetarian nacho dish is a delicious comfort food, with layers of nacho chips, vegetarian chicken pieces, bell bell pepper and melted cheese. The filling is seasoned with onion, garlic, paprika and cayenne pepper, and baked in the oven until the cheese is golden brown. Served with diced avocado and a fresh iceberg lettuce salad, this Mexican dish is perfect for a cozy meal.

Ingredients

  • 250 grams of vegetarian chicken pieces
  • 200 grams natural nacho chips
  • 1 bell bell pepper
  • 1 avocado
  • 1 onion
  • 1 clove of garlic
  • pepper and salt to taste
  • paprika powder to taste
  • 100 grams of grated cheese
  • 200 grams of iceberg lettuce

How to make a nacho dish.

    1. Cut the bell pepper into cubes and chop the onion. Put some oil in one frying pan and add the onion and press the garlic with a garlic. Fry this.
    2. Now add the vegetarian chicken and bake in about 6-8 minutes until golden brown. Add the paprika bugs and fry for a few minutes. Season with salt, (cayenne) pepper and paprika powder.
    3. Preheat the oven to 180 degrees. Cover the bottom of one baking dish With a layer of nachochips. Sprinkle a handful of grated cheese on this. After this the vegetarian filling goes over the cheese. Cover with nachochips and with the remaining cheese.
    4. Then bake in the oven at 180 degrees for about 20 minutes, until the cheese has melted.
    5. Meanwhile, cut the avocado into cubes. Serve the oven dish with a large mountain of iceberg lettuce and avocado "on the side". Enjoy!
