Ingredients

  • 3 onions
  • 1 red or chili pepper
  • 2 garlic cloves
  • 1 zucchini
  • 1 eggplant
  • 1 yellow bell bell pepper
  • 2 tbsp tomato paste
  • 400 gr. canned plum tomatoes
  • 400 gr. chili beans
  • 100 ml. red wine
  • 400 gr. minced beef
  • Olive oil
  • 2 tsp. ground cumin
  • 1 tsp. cayenne pepper (or a very small amount of chili flakes)
  • Pinch of allspice
  • Handful of fresh parsley, cilantro and oregano
  • Green tabasco
  • Salt & pepper from the mill

Mexican chili con carne

    1. Finely chop the onion, pepper and garlic. You cut the zucchini, eggplant, pepper and tin tomatoes into pieces of about 1 by 1 cm (the tomatoes are allowed to coarser).
    2. Heat olive oil in the pan and fry the onion until it gets a little color. Now add the garlic, pepper, cumin, cayenne pepper and allspice and stir everything.
    3. Add the cattle minced meat and fry the light brown. 
    4. Now add the sliced ​​vegetables and stir well so that all herbs are distributed. The tomato puree, canned tomatoes, the juice, chili beans, red wine and all fresh herbs are now added. Pour in 200 ml of water and add some salt and pepper.
    5. It's almost ready! You let the dish cook gently for 30 minutes until the vegetables are soft and the sauce has thickened. Just taste and possibly add some herbs or tabasco. This of course to your own taste.
