Yummy aren't those gingerbreads from the supermarket! Unfortunately, the ones from the supermarket are not so healthy, they are packed with refined sugar. So I started looking for an alternative and came up with this recipe for spice cake with honey. It is a healthier variant than the gingerbread from the supermarket, but it still contains relatively much unrefined sugar. Therefore, again: do not eat the whole gingerbread because it is a healthier variant ;-)!

Spice cake with honey

This spice cake with honey is a healthier alternative to the standard spice cake. Made from ground oatmeal and spelt flour, with honey, maple syrup and cake spices for a rich, sweet flavor. It is easy to make, has a wonderful fragrance while baking and can be frozen for later use. Add raisins, nuts or seeds if desired for extra flavor. A perfect treat for breakfast or as a healthy snack!

Ingredients

  • 200 gr oatmeal (finely ground)
  • 200 gr spelt flour
  • 325 ml milk (I used lactose-free milk, but oat or almond milk will do)
  • 2 eggs
  • 3 tablespoons honey
  • 3 tablespoons maple syrup or agave syrup
  • 3 tablespoons cake spice
  • 1 tablespoon of cinnamon
  • 2 teaspoons baking powder
  • Pinch of salt

How do you make spice cake with honey?

    1. Preheat the oven to 160 degrees.
    2. Grind the oatmeal in the food machine to flour.
    3. Grab a bowl and put in all other ingredients. Mix this well.
    4. Then add the oatmeal and mix it well again.
    5. Grease a cake tin or cover it with baking paper (the cake comes from the can). Spoon the mixture into the cake tin and sprinkle a little cookie spices over it.
    6. Put the gingerbread in the oven and bake for about 1 hour. After 50 minutes, take a look at how it goes, check with a skewer whether the mixture is already "dry". Will there be dough with it? Then you have to leave the cake a little longer.
    7. Then let cool (if you can wait so long because your house smells delicious!) And cut into slices. If you expect to be able to eat the cake in a few days, freeze a few slices in aluminum foil, so you always have a healthy snack in the house or a snack for the road.
