These gluten-free rice flour cookies are the new favorites at our house. After several failed rice flour cakes, they were initially received with little enthusiasm, but after the first bite, arms went up in the air. "Just like a 'real' cookie and incredibly crunchy."

Ingredients

  • 1 cup rice flour (about 120 grams)
  • 2 teaspoons coconut oil
  • 50 ml agave syrup
  • 1 teaspoon vanilla extract
  • 1 egg beaten
  • 1/2 cup pecans (about 50 grams)
  • pinch of salt

    How do you make rice flour cookies?

    1. Preheat the oven to 160 degrees
    2. Mix in a large bowl Mix all ingredients together, except the egg. In a separate bowl, whisk that well first. Then carefully add the egg and slowly spoon in the flour. Then knead well with your hands for a few more minutes.
    3. Keep the dough wrapped in aluminum foil in the refrigerator for about 2 hours. You can also prepare the dough in the evening and bake cookies the next morning.
    4. Line a Baking tray with baking paper. Make golf ball-sized balls of dough with your hands and place them, quite a bit apart, on the Baking tray. Press them flat with your fingers and mouldwith a spoon or fork a little until you have a nice round cookie.
    5. Bake for about 8-10 minutes until golden brown.

They were also allowed to be just as standard in the house, hints. Well, that is of course always nice to hear! A sugar -free cookie, without gluten that is also wonderfully crispy. So it's that easy.
