Chicken Cacciatore

Ingredients

  • 2 slices of smoked pancetta
  • 2 sprigs of fresh rosemary
  • 2 fresh bay leaves
  • 4 cloves of garlic, peeled, sliced
  • 1 onion, peeled, diced
  • 1 leek, sliced
  • ½ bottle pumpkin, unpeeled, in pieces
  • 300 gr sweet potato, unpeeled, in pieces
  • 100 gr chestnut mushrooms
  • 2 cans of peeled tomatoes (400 g)
  • 250 ml. Chianti or other red wine
  • 4 chicken thighs, with bone in
  • 12 black olives
  • 200 gr bread of your choice

Chicken Cacciatore

    1. Preheat the oven to 190 ° C. Finely chop the pancetta and rosemary needles. Heat some oil in the pan, add the pancetta, rosemary and bay leaves and stir for 2 minutes. Then finely chop the garlic, onion and leek, add to the pan and let - stirring occasionally - stand for 10 minutes. 
    2. In the meantime, wash and cut the pumpkin, sweet potato and mushrooms and add them to the stew.
    3. Remove the skin from the chicken thighs and place them in the pan. Pour in the wine, let it reduce and then add the tomatoes. To get all the juice out of the cans, fill them half with water, shake them back and forth and add the water with tomato juice to the pan.
    4. Pit the olives and add them. Bring the whole to the kook And then put the pan in the oven for an hour. The cacciatore thickens and is ready when the pumpkin and sweet potato are soft and the chicken falls off its bone.
    5. Taste just as well, season with salt and pepper and serve the dish with a freshly baked bread so that you can dip in the sauce. Enjoy your meal!
