If you are lactose intolerant, you cannot properly digest lactose, the milk sugar naturally present in milk. If you eat products containing lactose, you may experience symptoms such as abdominal pain, nausea, bloating and diarrhea. It varies from person to person how much lactose one can tolerate.

These oat cookies are a simple and delicious recipe, perfect for anyone who wants to eat gluten-free and lactose-free. Made with gluten-free oatmeal, rice flour, coconut blossom sugar and coconut oil, these cookies are crunchy and flavorful. The use of lactose-free yogurt makes them nice and fluffy and ideal for with tea or coffee. They are not really crispy until they are completely cooled, so wait a while before enjoying them!

Ingredients

  • 200 grams of gluten-free oatmeal or gluten-free oat flakes
  • 30 grams of rice flour
  • 35 grams of coconut blossom sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of salt
  • 40 grams of coconut oil (weigh before you melt it)
  • 140 grams of lactose-free semi-skimmed yogurt

How to make oat cookies.

    1. Preheat the oven to 170 degrees
    2. Grind the oat flakes in a food processor when you use oat flakes. Otherwise put the oatmeal in a bowl. Then add the rice flour, coconut blossom sugar, baking powder, baking soda and salt.
    3. Melt the coconut oil in a saucepan. Do this at the oatmeal, together with the lactose -free yogurt.
    4. First mix well with a spoon and then with your hands. Then turn the dough cookies. You can of course make them in any shape; I made hearts about 2 cm thick and got around 15 from this dough.
    5. Bake the cookies nice and brown in 20-30 minutes. Let them cool down, because they are only crispy when they have cooled completely. Enjoy!
