Scones are great for high tea or a sumptuous Sunday breakfast. Gluten-free scones bowl you unfortunately don't find on the menu at lunchrooms or restaurants very often. Are they really that difficult to make? Certainly not! So if you can't eat them out, at least you can make them at home. You serve them with a little sugar-free jam or a big dollop of whipped coconut cream.

Gluten-free scones

With this recipe, you'll know it's time for high tea! Making scones is as easy as making cookies.

Ingredients

  • 200 grams of gluten-free oat flour
  • 100 grams of cornstarch
  • 50 grams of potato starch
  • 250 ml vegetable milk
  • 1 large egg
  • 2 teaspoons baking powder
  • 1 1/2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • juice of half a lemon

Gluten-free scones

    1. Preheat the oven to 175 degrees
    2. Mix the oatmeal, cornflour and potato starch in a food processor with the milk, egg, baking powder, maple syrup, vanilla extract and lemon juice. Have mixed or knead with your hands.
    3. The scones do not rise, so you have to stick them out quite thickly, otherwise they become just as thin as with me ;-). Roll out the dough to the desired thickness (I would say about 5 cm) and stick out scones with a round shape.
    4. Place the scones on a baking sheet with baking paper and bake in about 25 minutes.
    5. Let them cool a little, cut open and serve with sugar -free jam or coconut cream. Enjoy your meal!
