Recently I wanted to make some goodies for coffee and was looking for a nice combination of flavors. So I couldn't believe my luck when I came across this gluten-free date cake with pecans.

This date cake with pecans and coconut has a crunchy almond base and a sweet filling of dates and pecans. The coconut oil and grated coconut add a delicious tropical flavor. Perfect as a quick and healthy snack or dessert!

Ingredients

  • 80 grams of coconut oil
  • 80 grams of pecans
  • 100 grams of dates
  • 2 eggs
  • grated coconut
  • 100 grams almond flour

How to make a date cake with pecans?

    1. Preheat the oven to 175 degrees.
    2. Put the almond flour in a bowl and add the egg. Grease a baking tin and divide the batter over the bottom. Press well.
    3. Bake the almond floor in the oven for 15 minutes. Allow the bottom to cool.
    4. In the meantime you start the filling. This is the most difficult part! Melt the coconut oil in a pan. Beat an egg in a small bowl. Lower the heat. You will now add the beaten egg to the melted coconut oil. NB! Stir very quickly with the whisk until it is well mixed. If you don't stir quickly enough, you will get scrambled eggs!
    5. Then cut the dates into very small pieces and add this to the coconut oil.
    6. Now also add the pecans and mix well again.
    7. Divide the mixture over the cooled almond floor.
    8. Sprinkle some grated coconut over the date cake and ready. Enjoy it!
