I think a panna cotta is one of the tastiest desserts; it is a nice ending to a dinner, which is not too heavy on your stomach. Especially for Christmas not a superfluous luxury, since you probably have quite a bit behind you before dessert. I thought it would be fun to experiment with this dessert by making chai panna cotta with orange and pistachio, an unusual variation. Chai is a delicious flavor for me and it combines perfectly with the pistachio and orange. Also good to know: this recipe consists only of natural sugars and is dairy-free.

Ingredients

  • 400 ml vegetable milk
  • 125 ml vegetable cream
  • 2 tablespoons honey (use agave syrup for the vegan version)
  • 2 teaspoons vanilla extract
  • 2 tea bags chai herbal tea
  • piece of ginger
  • teaspoon cardamom(powder)
  • 3-4 grams of agar agar
  • 1 orange (grater)
  • handful of pistachios (unsalted)

Chai panna cotta with orange

    1. Kook Water and put 100ml of water in a tea box. Add the two chai tea bags and the cardamom. Cut the ginger into pieces and add this. Allow to pull for about 20-30 minutes.
    2. Sift the cardamom, ginger and tea bags from the chaim mixture and put in a pan.
    3. Add the vegetable milk, the cream and agar agar and bring it to the kook.
    4. Let it boil for about 2 minutes (having a lot of bubbling) and then remove the pan from the heat. Add the honey and vanilla extract immediately and stir well with a whisk. Grate the skin of half an orange. Allow to cool to room temperature.
    5. When the mixture has cooled slightly, divide it over 4 trays or glasses. Put this in the fridge. The Panna Cotta needs a few hours to stiffen (or let the panna cotta set in the freezer, after it has cooled something)
    6. When the panna cotta is set, cut the pistachio nuts small and divide them over the four panna cottas. Grate the other half of the orange and divide the grater over the four glasses.
    7. Put in the fridge and remove them for 5 minutes to serve to get up to temperature. Enjoy!
