Banana bread is great. It's so ready, it's hugely filling and it's easy to make. But above all just insanely delicious. One slice will fill you up and believe me: if you know this is still in your bag as a snack at about 3 o'clock, you will be happy. If you freeze it you can take a slice of banana bread to work for a long time. You understand: I'm big on banana bread. You could already find a banana bread recipe on focusonfoodies.nl, but this time I made gluten-free and sugar-free banana bread with pecan nuts and those pecan nuts are really delicious!

Banana bread with pecan nuts

Mid-afternoon you often have a dip, your body needs fuel. Instead of stuffing it full of sugars, you can make this banana bread. Your body and you will be very happy with this!

Ingredients

  • 3 ripe bananas
  • 50 grams of dates (without seeds)
  • 3 eggs
  • 100 grams almond flour
  • 50 grams of hazelnut flour
  • 1 ½ teaspoons baking powder
  • half teaspoon baking soda
  • pinch of salt
  • 100 grams of coarsely chopped pecan nuts

Banana bread with pecan nuts

    1. Preheat the oven to 175 degrees
    2. Put the pitted dates and bananas in the food processor and mix until a smooth mixture.
    3. In a bowl, beat the eggs with salt light (about 2 minutes).
    4. Then carefully mix the eggs into the banana mixture and also spatula the almond flour, hazelnut flour, pecans, baking powder and baking soda. Stir this well until you have an even mixture.
    5. Grease a cake mold or add baking paper here. Pour the mixture into the cake mold and bake for 45-50 minutes until golden brown.
    6. If the cake gets dark too quickly, you can cover the can with some aluminum foil. Allow the banana bread to cool well before you remove it from the shape.
