Sometimes, every so often, I make a fantastic discovery. This avocado with egg and tomato is one of those. It's super healthy, perfect for lunch, requires almost no effort and tastes so good I could hardly believe it the first time I tried it.

You might wonder why something this tasty is also so healthy. Here's why: avocado is full of good fats, vitamins A, B1, B2 and B6, C and E, and lots of fibre. That makes the fruit great for your skin, hair, cholesterol, digestion, immunity and more. Eggs are, of course, a source of protein (which your body needs), but they also contain useful nutrients like iron, folate and vitamins B2, B12, E and D. The latter is especially welcome in winter because the body produces it from sunlight, and unfortunately we get less of that in winter. Finally, the tomatoes: they’re one of the few foods that become healthier when heated. Warming them releases more lycopene, a compound rich in antioxidants, beta-carotene and vitamins A and C.

Super tasty: oven-baked avocado with egg and tomato

Baked avocado with an egg, cherry tomatoes and fresh basil: a simple but delicious dish that’s on the table in about 15 minutes. Perfect as a light lunch or hearty breakfast.

Ingredients

  • 1 avocado
  • 2 eggs
  • 2 cherry tomatoes
  • fresh basil
  • salt & pepper

Oven-baked avocado with egg and tomato

    1. Preheat the oven to 200°C.

    2. Cut the avocado in half, remove the pit and scoop out a little flesh. Place the halves in a small ovenproof dish. Try to stop the avocados rolling — you can prop them against the edge. Sprinkle a little sea salt on the halves. Now crack an egg into each half. Some egg will probably spill out, but that’s fine. Slice the cherry tomatoes and distribute them over the avocado.

    3. Season with salt and pepper and put the dish in the oven for about 10-15 minutes, depending on how you like your egg cooked. When it's ready, finish with torn basil leaves. Eat it with a spoon. Enjoy!

This dish is not only quick to make but also very nutritious. Avocado is packed with healthy fats and, together with the egg, gives you a meal that keeps you feeling full for a long time.

Serve the avocado straight from the baking dish and eat it with a spoon. Delicious with a slice of (wholegrain) bread on the side for a complete meal.
