Well guys, you can guess: she was right. This is incredibly tasty! And so easy too — it really comes together quickly. On top of that it's lighter than a dough pizza, which I think is a nice change. Delicious oatmeal pizza with tuna & zucchini

This oatmeal pizza with tuna and zucchini is a healthy and filling meal. The crispy oat crust forms the perfect base for tomato sauce, vegetables and juicy tuna.

Ingredients

  • 250 g rolled oats
  • 2 eggs
  • 190 ml water
  • 10 tbsp tomato sauce (passata di pomodoro)
  • 1/2 zucchini
  • can of tuna in oil
  • 12 sun-dried tomatoes
  • 1/2 red bell pepper

Oatmeal pizza with tuna & zucchini

    1. Preheat the oven to 200 C.

    2. Put the oats in the blender and add the eggs, sun-dried tomatoes, a teaspoon of oil from the sun-dried tomato jar and the water, then blend until smooth.

    3. Place the parchment paper on a baking sheet and spread the mixture out so it forms a layer about 1/2 centimeter thick.

    4. Par-bake the base in the oven for 10 minutes. Meanwhile, cut the zucchini, bell pepper and remaining sun-dried tomatoes into pieces. Take the base out of the oven, spread it with tomato sauce and top it with the vegetables. If you like, you can also sprinkle some cheese on top.

    5. Put the pizza back in the oven for about 30 minutes. Keep an eye on the edges so they don't brown too much — if they do, take it out earlier. Enjoy your delicious pizza!

This pizza is a delicious way to use oats in a different way. The crust is naturally low in gluten and high in fiber, which makes it a lot more nutritious than a traditional pizza base.

Want to vary it? Add extra vegetables to taste or sprinkle some grated cheese over the pizza for an extra savory touch. Great for lunch or a light dinner!
