I’ve fine-tuned the recipe a bit by using crème fraîche instead of ready-made béchamel sauce (huuuuuu! packet alert!) and adding some special spices. So don’t be alarmed by the sugar, cinnamon and sambal. They give the dish a lovely Mediterranean twist!

Delicious lasagne with spinach and blue cheese

This lasagne combines a spiced tomato sauce with ground beef, creamy spinach and chunks of Gorgonzola for a surprising and tasty meal. Perfect for a cozy family dinner.

Ingredients

  • 250 g fresh lasagne sheets
  • 150 g Gorgonzola
  • 800 g ground beef
  • 500 g spinach (in cubes, frozen)
  • 1 onion
  • 2 cans peeled tomatoes
  • 3 large tomatoes
  • 200 g crème fraîche
  • 70 g tomato paste
  • 3 tsp oregano
  • 3 tsp nutmeg
  • 1 tsp sambal
  • 1 tsp cane sugar
  • 1 tsp cinnamon
  • salt & pepper
  • olive oil
  • a handful of fresh basil
  • grated Parmesan

Delicious lasagne with spinach and blue cheese

    Preheat the oven to 180°C. Finely chop the onion and garlic and sauté them in a little oil in the frying pan. Season the minced beef with oregano, salt and pepper and add it to the pan. Cook the beef until crumbly. Now add the canned tomatoes with their juice and the tomato paste. Add the sugar, cinnamon and sambal, stir well and let simmer over medium heat. Thaw the spinach cubes in the small saucepan and season with nutmeg. Whisk the crème fraîche in a bowl until smooth. When the spinach has thawed we’re ready to assemble the lasagne! Grease the baking dish and proceed as follows:

    That's quite a few layers 😉 Cover the dish with foil and place it in the oven for 30 minutes. In the meantime slice the tomatoes and grate the Parmesan. After half an hour remove the foil, place the tomatoes and the cheese on the top layer and put the dish back in the oven for another 15 minutes. Serve the lasagne with some fresh basil on top. Enjoy your meal!

The combination of Gorgonzola and spinach gives this lasagne a distinctive flavor that really sets it apart from the classic version. Make sure to cover the dish well with foil during the first 30 minutes in the oven so the lasagne sheets cook through and the flavors meld together nicely.

Serve the lasagne straight from the oven with some fresh basil for a bright finishing touch. This dish is also delicious the next day, as the flavors continue to develop.
