I don't eat bread very often. At least, not as a rule every morning or afternoon. In the morning I prefer yogurt with homemade granola and I like to have a nice salad for lunch. But sometimes I don't have enough at home to make a salad, or I just feel like having bread. For me a sandwich is never plain though — there have to be at least two toppings. One single slice of cheese is a no-go, so there's at least some pesto or sun-dried tomatoes with it.

2x special sandwiches

Two toasted spelt slices with their own character: a fresh sour cream–cucumber version and a spicy peanut butter–sambal combination. Quick to make and surprisingly tasty!

Ingredients

  • Smooth cucumber sandwich:
  • Toasted spelt slice
  • small tub of sour cream
  • 1/4 cucumber
  • salt & pepper
  • chili flakes
  • Spicy peanut sandwich:
  • Toasted spelt slice
  • peanut butter
  • slice of young matured cheese
  • a few cucumber slices
  • sambal of choice (I used badjak)

    Smooth cucumber sandwich

    Toast the slice until golden brown. Meanwhile, stir the sour cream in a small bowl and season to taste with pepper, salt and a few chili flakes. Cut the cucumber into thin slices — this is easiest with a mandoline (I bought that kind of slicer at Action). When the slice is ready, spread it with the mixture, top with some cucumber slices and finish with some freshly ground pepper.

    Spicy peanut sandwich

    Toast the slice until golden brown. When it's done, spread peanut butter on it. Then place the cheese on top, add the cucumber slices and spoon sambal over them.Call me crazy for this combo, but it's really damn tasty!

These two sandwiches prove that an extraordinary lunch doesn't have to be complicated. With a few simple ingredients you can put something on the table that tastes much better than it looks.

Feel free to vary the sambal to suit your preferred heat level, and when slicing the cucumber use a slicer for nice thin slices. Enjoy!
