Sweet, salty and a little crunchy: this feta-fig bake is the kind of dish that will quiet the table. You put everything on your baking sheet, slide it into the oven and half an hour later you have something that looks like a dish from a good restaurant. The perforated base of your sheet pan ensures the bottom stays nicely crisp while the feta becomes soft and creamy. Serve warm with a drizzle of honey and some fresh thyme, and enjoy.

Equipment

  • Baking sheet
  • Knife
  • Cutting board
  • Oven

Ingredients

  • 1 sheet puff pastry (rectangular, approx. 30x20 cm)
  • 200 g feta
  • 4 fresh figs
  • 3 tbsp crème fraîche
  • 2 tbsp runny honey
  • 4 sprigs fresh thyme
  • Freshly ground black pepper to taste

How do you make a feta-fig bake?

    1. Preheat the oven to 200°C (conventional heat).
    2. Roll out the puff pastry on the sheet pan and press the edges up slightly to form a small rim.
    3. Spread a thin layer of crème fraîche over the base and distribute it evenly.
    4. Crumble the feta over the crème fraîche. Spread the pieces so every bite has feta.
    5. Wash the figs, quarter them and arrange them over the feta. Press them down lightly.
    6. Sprinkle the fresh thyme leaves over, grind some black pepper, and drizzle half of the honey over everything.
    7. Slide the sheet pan into the middle of the oven and bake for 22 to 25 minutes until the base is golden brown and crisp and the feta has lightly coloured.
    8. Remove the bake from the oven and immediately drizzle with the remaining honey. Cut into pieces and serve warm.

A good sheet pan really makes a difference with this recipe. The perforated base lets moisture escape during baking, so your puff pastry stays crisp on the bottom and doesn't go soggy. That's exactly what you want in a bake like this: a sturdy, golden-brown base that supports the creamy feta and juicy figs.

This dish is lovely as an appetizer or savory nibble with a glass of wine, but it also works well as a light lunch. Want to vary it? Try swapping the figs for pear or red grapes. The combination of honey, thyme and feta always works, whatever you add.
