When you eat sugar-free and/or wheat-free, sometimes you crave something you can no longer eat. A cookie, bread, pasta. My mother has this with stuffed cookies. Especially for her this recipe, because although they don't look like them, these Sugar Free Fig Cookies with Almond Flour taste a bit the same. In fact, my mom likes these cookies even better than the "old stuffed cookies. That's another compliment.

These fig cookies with almond flour are a deliciously sweet and healthy snack made with a filling of figs, lemon juice and vanilla. The almond flour dough creates a nutty flavor reminiscent of old-fashioned stuffed cookies, but in a healthier, gluten-free version. Perfect as a snack or as a treat with tea!

Ingredients

  • Filling:
  • 5 dried figs, chopped
  • 3 tablespoons of lemon juice
  • 2 teaspoons vanilla extract
  • Dough:
  • 110 grams of almond flour
  • a pinch of salt
  • 30ml agave syrup
  • 1 teaspoon vanilla extract
  • 10g coconut oil

How do you make fig cookies with almond flour?

    1. Put the figs in a food processor and blend until they have small pieces. Then add the lemon juice and vanilla extract and grind it into an even pasta. Taste for a moment and add more lemon or vanilla to taste.
    2. First mix the almond flour with the salt in a large bowl and then add the agave syrup, vanilla extract and coconut oil. Knead the dough into a smooth whole and wrap it in household film. Let the dough rest for about an hour in the fridge heat the oven in the meantime to 175 degrees.
    3. Divide the dough into about 3 equal parts. Roll 1 part on a baking sheet with baking paper to a rectangle of approximately 1 to 2 cm thick. Spread your fig mixture lengthwise over 1 half of the dough.
    4. Then fold the other half of the dough over the rubbed part (left over the right). So you actually fold the dough twice. Press the folds well on all sides so that no fig filling runs out.
    5. Place the baking sheet in the oven and bake for about 10-15 minutes until the Newtons are nicely golden brown.
