Usually I try to keep recipes as simple as possible. I'm sure I'm not the only one who gets all giddy with a long list of ingredients? Although of course I do use ingredients that you can't always get in the supermarket, which means you'll have to explore a health food store. If you have some basic stuff around the house, you can make most of my recipes in no time.

Oatcakes without refined sugars

A simple recipe with few ingredients. The cakes are full of fiber and are deliciously crunchy.

Ingredients

  • 200 grams of gluten-free oatmeal or gluten-free oat flakes, e.g. from Lieke is Vrij
  • 1/2 teaspoon baking soda
  • 35 grams of coconut blossom sugar
  • 40 grams of coconut oil
  • 140 grams of vegetable yogurt or goat yogurt if you don't eat vegan/lactose-free
  • pinch of salt

Oatcakes without refined sugars

    How to make oatcakes without refined sugars.

    1. Preheat the oven to 170 degrees
    2. Grind the oat flakes in a food processor, if you use one. Otherwise, put the oatmeal in a bowl. To this, add the baking soda, coconut blossom sugar and the pinch of salt.
    3. Melt in a sauce pan the coconut oil. Add this to the oatmeal along with the yogurt.
    4. Mix well. It is a very sticky dough, so you will get dirty hands. Turn the dough into large, flat cookies about 10 cm in diameter.
    5. Bake them for 20-30 minutes until nicely browned. Let them cool, only then they become really crispy.

Like I said, it's really a simple recipe, the simplest cookies that I made so far. You need gluten -free oatmeal or gluten -free oat flakes. If you don't have a gluten allergy you can just buy oatmeal from the supermarket. The oat cakes are wonderfully crispy and if you keep them in an airtight drum for a few days. Don't keep it for too long, because it has yogurt in it and that will not be good for a long time.
