Dessert with oatmeal and lemon curd

The lemon curd with oatmeal is a delicious, fresh dessert! Which is easy to make.

Ingredients

  • For the bottom:
  • 50 grams of gluten-free oatmeal
  • 3 pitted dates
  • 1 tablespoon coconut oil
  • 1 tablespoon honey
  • For the interlayer:
  • 50 grams of mascarpone
  • 50 grams of whipped cream
  • 20 grams of coconut flour sugar
  • For the lemon curd:
  • 1 lemon
  • 1 egg
  • 2 tablespoons honey
  • 50 grams of coconut oil or butter

Dessert with oatmeal and lemon curd

    1. Split the egg and keep the egg yolk separate. Melt the coconut oil (or butter) and then mix it with honey and the egg yolk. Squeeze the lemon and add the lemon juice. You can also grate a bit of the lemon zest, then add this now.
    2. Put back on the fire and let it warm up slowly (do not boil). As you stir, the mixture becomes thicker. Allow to cool once it has become the right thickness and put in the fridge.
    3. Put the oatmeal, coconut oil, honey and dates in a food processor and grind.
    4. Divide this over 2 glasses and gently press.
    5. Beat the whipped cream with mascarpone and coconut blossom sugar until it is nice and thick. Divide this over the glasses.
    6. Then clean the lemons well and grate 1 lemon above the bowl (not the white).
    7. Now put in the fridge until you serve the desserts. Finally, divide the lemon curd over the desserts. Enjoy!

It was perfect for that, because we were able to prepare the desserts earlier in the day. That saves a lot of time and stress in the evening. And that also makes it very useful as a dessert when you have guests on the floor and want to chat with it.
