This sweet potato mash with arugula and goat cheese is a modern take on the Dutch classic. While traditional mash is heavy and substantial, this version feels light and refreshing. The sweet potato provides a soft, creamy base, while the arugula and goat cheese add a kick and freshness.

Mashed potatoes with sweet potato, arugula & goat cheese

Perfect for a weeknight when you want something easy that still feels like comfort food. In less than half an hour, a colorful, nutritious meal is ready. Warm, creamy, and just a tad more chic than the classic stamppot.

Ingredients

  • 1 kg sweet potatoes, peeled and chopped
  • 75 g arugula
  • 150 g soft goat cheese
  • 1 red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 50 ml milk or cream
  • Salt & pepper to taste
  • Optional: handful of walnuts or pecans, coarsely chopped

Mashed potatoes with sweet potato, arugula & goat cheese

    1. Peel and dice the sweet potatoes.
    2. Boil them in a pan with water and a pinch of salt for 15–20 minutes until tender.
    3. Heat 1 tablespoon of olive oil in a frying pan.
    4. Slowly sauté the red onion over low heat until soft and lightly caramelized.
    5. Drain the potatoes and let them steam dry.
    6. Add the butter and milk and mash until smooth.=
    7. Toss the arugula into the warm mash (it will shrink slightly).
    8. Add the red onion and mix well.
    9. Crumble the goat cheese over the top and stir briefly until it melts slightly.
    10. Season with salt and pepper.
    11. Place the mashed potatoes on a plate.
    12. Sprinkle with some extra goat cheese or walnuts.
    13. The creamy sweet potato, tangy arugula, and soft goat cheese make this a delicious comfort food with a modern twist.
