Italy has its aceto balsamico di Modena, France its Champagne, but what is really Dutch cultural heritage? The Netherlands has long been making products to be proud of, but what is a typical example of Dutch cultural heritage? Cheese! What could be more fun to make something tasty with this delicious Dutch product, which is how the flavorful pesto was created: an ode to Gouda cheese.

Equipment

  • Hand blender or food processor

Ingredients

  • 2 large handfuls of fresh rosemary
  • 1 large clove of garlic
  • Small handful of walnuts
  • 50 g gouda cheese
  • 50 ml olive oil
  • Pinch of salt

Rosemary pesto

    1. Ris all needles of the rosemary sprigs.
    2. Peel the clove of garlic and put it together with the rosemary, walnuts, cheese and salt in the chopping mill. Mix well until a grainful whole is created.
    3. Now add almost all oil and chop everything together. Look carefully at the substance: is it too dry? Then some oil is allowed. Is it too wet? Then add some walnuts. Don't forget to taste! Then you find out what is missing to your taste and you can add it if necessary.
