Quesadilla with cottage cheese is a simple and tasty vegetarian dish, ready in just 12 minutes. The wraps are spread with cottage cheese and filled with a mix of sautéed peppers, zucchini, eggplant, onion and sun-dried tomatoes. Seasoned with oregano, the quesadillas are placed in the Grill pan baked until crispy. Perfect for a quick Mexican meal with endless variation possibilities.

Ingredients

  • 4 large multigrain wraps or 8 small multigrain wraps
  • 200 grams cottage cheese
  • 8 sun-dried tomatoes
  • 1 bell bell pepper
  • 1 zucchini
  • 1 eggplant
  • ½ red onion
  • ½ teaspoon oregano

How do you make a quesadilla with cottage cheese?

    1. Cut the sun -dried tomatoes small. Also cut the bell pepper, zucchini and eggplant into cubes. Chop the red onion.
    2. Fry the onion in some olive oil. Add the bell pepper, zucchini and eggplant and fry for about 6-7 minutes in one frying pan. Add the oregano and season with salt and pepper.
    3. Spread the wrap with cottage cheese. Divide the tomatoes over it. Then you divide vegetables over it. Siege with a second wrap.
    4. Now fry the wraps in the grill pan or in a contact grill. Enjoy!
