That I am a cheese lover, not only Lianne knew that, but also everyone who knows me a little bit. Vegetarian: ok, but vegan it will never be for me: cheese is just too good. So I'll show you how to make these savory muffins with gruyere, broccoli and spinach!

Ingredients

  • 2 eggs
  • 200 grams gluten-free self-rising baking flour (e.g. Orgran)
  • 250 ml vegetable milk (e.g. rice milk or soy milk)
  • 1 teaspoon chopped chives
  • about 125 grams of broccoli
  • 2 handfuls of fresh spinach
  • 1 onion, chopped
  • half teaspoon paprika
  • pinch of garlic powder
  • generous pinch of salt and pepper
  • 75 grams of gruyere (grated)

    How to make savory muffins with gruyere, broccoli and spinach?

    Preheat the oven to 200 degrees

    Cut the broccoli into small pieces and chop the chives, chop the onion and wash the spinach and also cut it into small pieces.

    Put the baking flour in a bowl and add the chives, salt and pepper, garlic powder,paprika and onion. Then add the milk and two eggs and mix with a spatula or whisk (or food processor). 

    Then stir in the pieces of vegetables and about 50 grams of gruyere.

    Save the remaining 25 grams of cheese for garnishing.

    Divide the batter among the muffin tins. Garnish with the remaining gruyere and bake in the oven for 20 minutes until golden brown.

The spicy cheese flavor combines well with the muffin dough and the sweet onion. The broccoli and spinach ensure that the muffins also contain the necessary vitamins.
