What an intense moment of happiness it can sometimes be, when you experiment with a recipe and the outcome is fan-tas-tastic. Such was the case with these waffles. I wanted to make a recipe for gluten-free waffles without sugar that was also lactose-free and vegan. I puzzled over a recipe and when the time came to put the batter mix in the waffle iron, I thought: 'nooooo, this batter is way too thick'. Just a side note: I had never made my own waffles before, so basically I had no idea what I was doing, but it worked anyway. And how!

Gluten-free waffles

There are no gluten, refined sugars or animal products in these waffles. Lots of flavor, though!

Ingredients

  • 60 grams of gluten-free oatmeal (or oatmeal flour)
  • 40 grams of almond flour
  • 1 large, ripe banana
  • 30 grams of coconut oil
  • 1 generous teaspoon of cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon stevia/sugar substitute
  • 1 generous teaspoon vegetable milk, e.g. almond milk or soy milk
  • Handful of strawberries or other fresh fruit

Gluten-free waffles

    1. If you use oatmeal, first grind it in the food processor.
    2. Add the almond flour to the oatmeal flour. Mash the banana and add it. Melt the coconut oil and also add it, together with the milk, cinnamon, baking powder and sugar substitute
    3. Let the food processor mix this for about 1 to 2 minutes.
    4. Let the waffle iron heat up. Then scoop the mixture on the plates. You have to try to distribute it a bit, for example with a pan licker or your spoon. Close the waffle iron and bake for about 5 minutes.
    5. Cut the crowns of the strawberries and serve with the warm waffles. Garnish with some sugar replacement powdered sugar. Enjoy!

I often get questions from people how to replace fruit sugars in recipes, because fruit sugars can also cause an increase in blood sugar levels. Not everyone can handle that. With a complete low -carbohydrate recipe, for example for diabetics, you can replace the banana with an egg and add some extra sugar substitute. You don't need much, so start with a maximum of an extra teaspoon.

Stevia is a natural sugar replacement without calories and therefore well suited for people who (have to) eat low -carbohydrate or sugar -free, for example with diabetes. I hope you enjoy these waffles as much as I am, they are really fantastic!
