Stuffed avocado with shrimp
Stuffed avocado with shrimp is a simple and healthy dish, ideal as an appetizer, lunch or light main meal. The flesh of avocado is mixed with cucumber, spring onion and Dutch shrimp, and seasoned with a lemon-dill dressing. The mixture is spooned back into the avocado skins for an attractive presentation without baking.

Ingredients
- 2 avocados (for main course, use 4 avocados)
- 2 spring onions
- 1 piece of cucumber about 7 cm long
- 100 grams of peeled Dutch shrimp
- 1 tablespoon (sugar free) mayonnaise
- 3 sprigs of fresh dill
- ½ lemon
- pepper and salt to taste
