Smoked onions are delicious and very handy as an ingredient to have in stock. Smoked onions can be incorporated into soups, stews and sauces, for example. They are also delicious on their own. You can keep smoked onions in the refrigerator for about 1 week!

Ingredients

  • 1 kg onions
  • Olive oil
  • Salt and Pepper
  • Smoking wood of your choice

Smoked onions

    For a fuller smoke flavor, cut the onions vertically in half, through the root and with the skin still around it. If you prefer a more subtle flavor, or want to smoke more slowly, leave the onions whole with the skin still around them. 

    If you cut the onions in half, brush the cut surface with some olive oil. Season with salt and pepper. Whole onions can be smoked this way.

    Place the wood chips in the smoker. Once the oven reaches a temperature of about 90 C you can put the onions in it. Smoke the onions for 20 to 50 minutes until they have the desired smoke flavor. Experiment with what you like best!

    Store the onions airtight wrapped in the refrigerator, wait 2 days until use.
