Peanut butter is one of my favorites. I can really put it on anything: "old-school" on bread and crackers, but I also use it in my vegetable curries, through my oatmeal and I make healthy cookies with it. Since I try to alternate as much as possible in what I eat, it was high time I started stocking up on other nut spreads. There are many kinds for sale in (health) stores. But making your own is much more fun! You can be sure that there are no unnecessary additives and that the nuts are as unprocessed as possible. And more importantly: you can experiment with extra flavorings to make the spread even tastier than the one from the store! This time I made cashew spread with vanilla.

Cashew paste with vanilla

Make your own nut spread. This cashew spread is a deliciously creamy variation on the ever-popular peanut butter.

Ingredients

  • 200 grams of unroasted and unsalted cashews
  • ½ tsp vanilla powder
  • salt
  • a powerful food processor or blender

Cashew paste with vanilla

    1. Put the nuts together with the vanilla powder and a pinch of salt in the food processor or blender. Turn on your machine.
    2. Now you have to do two things: (1) to be patient, it takes 5 to 10 minutes for the spread to be ready (this varies per machine). You will see that the nuts from coarse crumbs to fine flour change and then see that the nut oil is slowly released. You must continue to mix until this creamy thick mass is created and the oil has been released. (2) The second thing you have to do is keep an eye on your machine/blender so that it doesn't get overheated. Give him a break when necessary.
    3. When the spread is ready, put it in a clean jar. The cashew spread is super tasty for your yogurt, your oatmeal porridge or through a smoothie. Or spread a sandwich with it and then spread it with banana ... ..

Did you know that nuts have different compositions of nutrients? For that reason alone, it is a good idea to alternate your peanut butter! Compared to other notes, the cashew nut has a high protein content and it excels in its high content of magnesium, iron and phosphorus. What is also unique about cashew nuts is that they contain many B vitamins that contribute to good energy metabolism. The cashew nut is therefore a real winner, especially if you eat little or no meat or dairy products.

I chose to make a spread of cashew nuts. I added some real vanilla what turned out to be a heavenly combination ... Jumm…. The taste even reminded me a bit of that of white chocolate ... so creamy !!
