The result was a little different from what I'm used to. Normally I am very happy with a baking, or it didn't work out and then I don't post it. With this gluten-free butter cake, I didn't know; the texture was good and it really looks like butter cake, but it doesn't really taste like butter cake. Even though this baking turned out a little different than expected, it still has a nice taste! Hence, I am sharing it anyway.

Butter cake with coconut blossom sugar

This easy recipe is for everyone. Surprise your guests and yourself with this delicious dessert. Perfect to end a dinner party!

Ingredients

  • 300 grams of gluten-free flour (or 150 grams of rice flour and 150 grams of gluten-free oat flour)
  • 250 grams unsalted butter
  • 150 grams of coconut blossom sugar
  • 1 egg (+ 1 egg for spreading)
  • pinch of salt
  • rind of 1 lemon

Butter cake with coconut blossom sugar

    1. Make sure the butter is at room temperature. Then mix the butter with the coconut blossom sugar.
    2. Add the egg and a pinch of salt and then the flour. Let the food processor knead or knead this by hand for a few minutes.
    3. Grease a butter cake shape of approximately 20 cm in diameter and fill it with the dough mixture. Press and apply a pattern with a fork if necessary. Brush the top with a beaten egg.
    4. Bake at 180 degrees in about 30 minutes.
