French toast is one of those classics that never gets boring. You need very little, the pan does the work and within twenty minutes something tasty is on the table. The caramelized banana makes it a little more special without getting complicated. Exactly the kind of breakfast to start the day right.

Crispy French toast with a soft interior, warm cinnamon aroma and sweet caramelized banana. This is the breakfast you don't want to skip.

Ingredients

  • 4 slices white or semi-white bread (preferably one day old)
  • 2 eggs
  • 100 ml whole milk
  • 1 tsp cinnamon, plus extra for sprinkling
  • a pinch of salt
  • 2 ripe bananas
  • 2 tbsp brown sugar
  • 40 g unsalted butter (divided)

How do you make French toast with cinnamon and caramelized banana?

    1. Whisk the eggs in a shallow bowl with the milk, one teaspoon of cinnamon and a pinch of salt. Stir until smooth.
    2. Peel the bananas and cut them into slices about half a centimetre thick.
    3. Melt a knob of butter in a frying pan over medium heat. Place the banana slices in the pan and sprinkle with the brown sugar. Let them caramelize to a golden brown for two to three minutes, flip them over and cook for another minute. Remove from the pan and set aside.
    4. Dip the slices of bread one by one into the egg mixture. Let them soak briefly, but not so long that they fall apart. Fifteen to twenty seconds per side is enough.
    5. Heat another knob of butter in the pan over medium heat. Cook the French toast for two to three minutes per side until golden brown and crispy.
    6. Place the French toast on a plate, spoon the caramelized banana on top and sprinkle with an extra pinch of cinnamon. Serve immediately.

A good frying pan with even heat distribution really makes a difference for French toast. You want a nice golden crust without burnt edges, and that's easiest with a pan that holds the heat steadily. Choose a pan that will keep doing its job well in the long run.
