It’s probably clear by now that I’m completely wild about Italian cuisine. I also have another weakness, one that is perhaps less well known. I’m mad about starters. I like them so much that at a restaurant I often order two starters instead of a starter and a main course. When Tigon one day pulled this delicious vitello tonato out of his sleeve I was blown away. He had ‘just’ come up with it himself and couldn’t quite remember what he’d done. Impossible, of course, because I HAD to know so I could blog about it! Since then I’ve watched over his shoulder a few times and can now share the recipe with you.

Vitello tonato

Vitello tonato is an elegant Italian classic where thin slices of veal fricandeau are served with a silky sauce of tuna, sardines and capers. Perfect as an impressive starter for a festive dinner.

Ingredients

  • Good veal fricandeau – allow 100 g per person (it's really best from the butcher)
  • 2 cans tuna in olive oil
  • 120 ml Zaanse mayonnaise
  • 2 tbsp white wine vinegar
  • 2 tsp capers + extra to garnish
  • 1 can sardines
  • arugula
  • olive oil
  • salt & pepper

Vitello tonato

    1. Toss the arugula with a little olive oil and salt and pepper, spread it over the plates and drape the veal fricandeau on top. We make the tuna mayonnaise by puréeing the tuna, sardines, capers, mayonnaise and vinegar with an immersion blender until smooth. Taste and season with salt and pepper if needed.

    2. Spread the tuna mayonnaise over the fricandeau and finish with a few capers. Buon appetito!

The tuna mayonnaise is the secret of this dish. By puréeing the tuna, sardines and capers with an immersion blender you get a sauce that is rich, savory and wonderfully smooth. Use a good Zaanse mayonnaise as the base for the best result.

Vitello tonato is a perfect starter to prepare in advance. Make the tuna mayonnaise ahead and keep it covered in the fridge. Just before serving you only need to assemble the plates with the arugula, fricandeau and sauce.
