Yes, you read that right: not 'not vegetarian' but a vegan sushi bowl! Vegan means the dish contains no animal products. So no meat or fish, and also no milk, eggs, honey or other animal-derived ingredients.

I don't cook vegan on purpose: I enjoy a bit of meat or fish and I also like making tasty things with other animal products. Still, I like to try something new now and then, and vegan is completely new to me. I can imagine you might be wondering 'what on earth you're supposed to eat then' — I wondered the same 😉

Vegan sushi bowl

This vegan sushi bowl combines brown rice with roasted shiitakes, fresh avocado and crunchy vegetables. A quick and healthy meal full of Asian flavours.

  • Large bowl

Ingredients

  • 150 g (short-grain) brown rice
  • 1 tbsp sesame oil
  • 150 g fresh shiitakes, sliced (or 50 g dried shiitakes; if using dried, soak them in warm water for 8 hours)
  • 1 tbsp soy sauce
  • 1 avocado
  • 2 spring onions
  • 2 nori sheets
  • ½ cucumber
  • 10 radishes
  • 2 tbsp sushi ginger
  • 2 tbsp toasted sesame seeds

Vegan sushi bowl

    1. Cook the rice according to the package instructions and drain as soon as it's done. Meanwhile, slice the shiitakes into strips, cut the avocado into pieces, slice the spring onions into rings, slice the radishes and dice the cucumber. Cut the nori sheets into 1 × 1 cm squares.

    2. If you're using dried shiitakes, drain them now. Heat the sesame oil and fry the shiitakes for 1 minute. Add the soy sauce and cook for another minute. Turn off the heat and let the shiitakes sit in the pan for a little while.

    3. To make the dressing, mix all the ingredients in a small bowl. Set aside a few spring onion rings and shiitake strips to use as decoration. Take a nice serving bowl and mix all the ingredients except the sesame seeds together. Pour the dressing over the salad and toss well. Divide between two bowls and garnish with the spring onions, shiitakes and sesame seeds. Yum!

This sushi bowl is ideal when you want something tasty and healthy on the table quickly. The combination of savory shiitakes, creamy avocado and fresh vegetables makes for a balanced meal that also looks beautiful.

Vary to your taste by adding extra vegetables, such as edamame or carrot sticks. Serve immediately after assembling so the rice stays nice and warm and the avocado stays fresh.
