Is it a tortilla? Is it a pizza? No, it's TORTIZZA! Tortizza is totallyhot right now and I can now see exactly why: it's super easy to make, really healthy and honestly so, so tasty. Oh, I almost forgot to explain exactly what it is 😉 Maybe you guessed it already — it's a cross between a pizza and a tortilla. You use a tortilla wrap as an ultra-thin pizza base and top it with whatever you fancy.

Tortizza with sweet pepper and courgette

These tortizzas with sweet pointed pepper, courgette and feta are ready in no time. A light and tasty meal you can take straight from the oven to the table.

Ingredients

  • 4 wholegrain tortilla wraps
  • 1 sweet pointed pepper
  • 1 courgette
  • 1 small can of tomato paste
  • 1 block of feta
  • a bag of rocket
  • some dried oregano
  • pepper & salt
  • good olive oil

Tortizza with sweet pepper and courgette

    1. Preheat the oven to 200C.

    2. Spread the tortillas with a small spoonful of tomato paste and smooth it out. Sprinkle some oregano over them, about 1/2 teaspoon per wrap.

    3. Wash and chop the pepper and courgette into pieces and divide them over the tortizzas. Now crumble some feta and place it on top. Season with a little pepper, salt and a drizzle of olive oil and put them on the oven rack.

    4. Let them cook and crisp up in 15 minutes. When they come out of the oven, serve the tortizzas with a handful of rocket. Enjoy!

These tortizzas are ideal as a quick midweek meal. The wholegrain wraps get wonderfully crispy in the oven, while the pepper and courgette become soft and flavourful. A fresh handful of rocket on top finishes them off.

Place the tortizzas directly on the oven rack for the best crispiness. Use a good olive oil to bring out the flavours. Serve them straight from the oven for the best result.
