A nice bonus: there are no perishable ingredients, so you can make enough for the whole week in one go. Just store the bars in the fridge so you can grab one every day =)

Super bar with nuts and fruit

This super bar is full of nuts, dried fruit and seeds and is super easy to make without baking. Perfect as a healthy snack that keeps for weeks in the fridge.

Equipment

  • Food processor with standard blade
  • Loaf pan (or another similarly sized dish)
  • baking paper
  • small saucepan

Ingredients

  • 10 Medjool dates
  • 5 dried figs
  • a handful of almonds
  • a handful of walnuts
  • a handful of pecans
  • a handful of cranberries
  • 1 tbsp chia seeds
  • 1 tbsp flaxseed or hemp seed
  • coconut oil

Super bar with nuts and fruit

    1. Line the loaf pan generously with baking paper, leaving an overhang so the bar will be easy to lift out later. Put all the ingredients except the coconut oil into the food processor and pulse until everything is coarsely chopped. Decide the exact amounts of the nuts and cranberries yourself according to what you like best. I used a handful of each: if you stick to that amount the mixture will be nicely balanced.

    2. Melt some coconut oil in a small saucepan until it becomes liquid. Add the oil to the mixture in the food processor little by little and blend until the mixture is sticky enough to form into balls. Now put the mixture onto the baking paper in the loaf pan and press it down very firmly. Really press it down! That way you'll be able to form neat bars later.


    3. Put the pan in the fridge for at least two hours. After that you can lift the paper out and cut into small bars. You can also use the paper to store the bars: they keep a long time in the fridge (I kept them for two weeks). Enjoy!

These bars keep for a long time in the fridge. Store them wrapped in baking paper so they don't stick together. They stay fresh and tasty for up to two weeks.

Feel free to vary the nuts or dried fruit to your liking. That way you can make a different bar each time. You don't have to be exact with the proportions.
