Sweet potato is one of my favorite ingredients. It's easy to work with, pairs with almost anything and it's so delicious!
Both broccoli and sweet potato are super healthy and therefore realsuperfoods. We ate a nice tender steak with it, but this dish also works well vegetarian or served with a piece of fish.

Superfoods: broccoli met zoete aardappel en sinaasappeldressing

Roasted sweet potato combined with steamed broccoli and a fresh orange dressing. A healthy and flavorful dish that you can get on the table quickly.

Ingredients

  • 500 g sweet potatoes
  • 4 tbsp olive oil
  • 500 g broccoli
  • 1 red chili
  • 2 spring onions
  • 2 garlic cloves
  • 3 tbsp orange-pepper dressing (to make: 4 tbsp orange juice, 1 tbsp olive oil, pepper)

    1. Preheat the oven to 200 °C. Scrub the sweet potatoes well and cut them into wedges. Line a baking tray with parchment paper, place the potatoes on it and drizzle with olive oil and a little salt. Roast them in the oven for 30 minutes, turning every 10 minutes.

    2. Wash the broccoli and cut it into florets. When the sweet potatoes have been in the oven for 35 minutes, steam the broccoli for about 5 minutes until just tender. Remove the seeds from the chili and slice it into rings. Slice the spring onions and finely chop the garlic.

    3. Heat some oil in a pan and fry the spring onion for 1 minute. Now add the chili and the garlic and fry for another minute. Finally, cook for 1 more minute with the broccoli added. Meanwhile prepare the orange dressing. The potatoes should now be ready: put them in a bowl, top with the broccoli and drizzle over the dressing. Enjoy!

This dish is packed with nutrients thanks to the combination of sweet potato and broccoli. Both vegetables are rich in vitamins and antioxidants, making this a true superfood meal.

The homemade orange dressing gives the dish a fresh and slightly spicy flavor. Adjust the amount of red chili to taste for more or less heat.
