These cookies are sugar-free but still nicely sweet. They're easy to make and don't take long. The cookies are also suitable if you have allergies: they're lactose-free and gluten-free (when you use gluten-free oats).

Super quick vegan peanut butter cookies

These vegan peanut butter cookies are super quick to make with a handful of simple ingredients. No fuss—just mix everything, shape and pop them in the oven!

Ingredients

  • 100 g peanut butter (I use the regular version from Calvé, which contains only peanuts, vegetable oil and salt)
  • 30 g almond flour
  • 40 g agave syrup
  • 60 g oats
  • 1 tbsp cacao nibs
  • 1 tbsp coconut flakes
  • 1 handful of walnuts
  • 1 tbsp rice milk

Super quick vegan peanut butter cookies

    1. Line the baking sheet with parchment paper and preheat the oven to 175°C. Grind the walnuts a little finer in a mortar. Put all ingredients in the bowl and knead into a dough. If the dough is a bit dry, add a little rice milk.

    2. Shape cookies from the dough: roll a ball and flatten it between your hands. Use stamps or cutters to make them a bit more fun 😉 Place the cookies on the baking sheet and bake for about 10 minutes. Check they’re nicely browned; if not, give them a little longer in the oven. Stored in an airtight container, the cookies will keep for a few days. Enjoy!

Store the cookies in an airtight container and they'll keep for a few days. You can easily swap the walnuts for another nut or seed of your choice.

Tip: if the dough is too dry, add a small splash of rice milk until it's easy to knead. That way you’ll get nice, firm cookies every time.
