Beetroot and apple salad

Fill your plate with lamb's lettuce. Slice the beetroot (I prefer them thin) and spread them over the greens. Peel the apple, cut it into cubes and place over the beets. Season everything with salt and pepper and sprinkle on the seeds and kernels. For the dressing, put 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, a teaspoon of horseradish and a drizzle of honey in a small bowl. Give it a quick stir and pour over the salad. Tadaaa! A super tasty salad is ready =D

A chef friend suggested crumbling some feta on top. I didn't have any at home, unfortunately, but it sounds lovely. Enjoy!

Want to make the salad a bit heartier? Crumble some feta over it for a creamy, salty counterpoint to the sweet beetroot and apple. A lovely combination that also makes the salad suitable as a light meal.

You can easily make the dressing in a small bowl with a fork or a small whisk. Pour it over the salad just before serving so the lamb's lettuce stays nice and fresh.
