You can't really call this recipe a salad, since there's no lettuce involved. I called it that because it's a tastyside dish — for example to go with a BBQ or a gourmet meal. The dish shines in its simplicity: it only uses 5 ingredients.

Recipe

Equipment

  • Large pot
  • small saucepan
  • serving bowl or mixing bowl

Ingredients

  • 400 g. pasta of your choice (I used conchiglie, shells)
  • 400 g. smoked salmon
  • 250 ml heavy cream
  • a handful of fresh dill
  • 4 tbsp. Bio Bandits ‘Irristible Italian’ dressing (or make a simple sauce from mustard and honey)
  • salt & pepper

Creamy pasta salad with salmon

Cook the pasta according to the instructions on the package. Pour the heavy cream and dressing into a small saucepan and add the finely chopped dill. Warm briefly over low heat, do not let it boil! Meanwhile, cut the smoked salmon into strips. Drain the pasta once it's ready and put it in the serving bowl. Stir the salmon through the pasta and add the cream sauce. You'll see the salmon will cook slightly from the heat of the pasta and the cream, which is fine.

Taste and adjust with a little salt and pepper and your pasta salad is ready!

This pasta salad is delicious served warm but also tastes great after it has cooled down. Store any leftovers covered in the fridge and eat them the next day.

No smoked salmon on hand? You can also make this recipe with other smoked fish or with cooked shrimp. Adjust the herbs to your taste for a personal touch.
