Deviled eggs with a creamy filling, served with fresh spring vegetables and crusty bread. Exactly what you need for a tasty Easter table.

Ingredients

  • 8 eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and freshly ground pepper to taste
  • 1 bunch chives
  • 6 radishes
  • 1 handful watercress
  • 2 spring onions
  • 1 tsp paprika powder (sweet or smoked)
  • Sea salt flakes (optional)
  • Crusty bread, to serve

How do you make deviled eggs with spring vegetables for Easter?

    1. Hard-boil the eggs for 10 minutes in plenty of water. Then cool them in cold water and peel them.
    2. Cut the eggs in half lengthwise and remove the yolks. Put the yolks in a mixing bowl.
    3. Add the mayonnaise, Dijon mustard, lemon juice, salt and pepper to the yolks. Mash everything together until smooth and creamy.
    4. Finely chop the chives and stir half into the filling. Taste and adjust the seasoning if needed.
    5. Spoon or pipe the filling back into the egg whites. Make sure they look nicely filled.
    6. Slice the radishes thinly and break the watercress into small sprigs. Slice the spring onions on the diagonal.
    7. Arrange the deviled eggs on plates. Neatly arrange the radishes, watercress and spring onions around them.
    8. Sprinkle everything with the remaining chives, a pinch of paprika and, if you like, some sea salt flakes. Serve immediately with crusty bread.
