Paas Spritz with orange and rosemary

This Paas Spritz combines the fresh flavors of orange and rosemary with sparkling water and a splash of bittersweet liqueur. Festive, simple and ready in five minutes.

Ingredients

  • 2 oranges (1 for juice, 1 for garnish)
  • 360 ml bittersweet orange liqueur (60 ml per glass)
  • 480 ml prosecco (80 ml per glass)
  • Sparkling water to taste
  • 50 g fine granulated sugar (for the syrup)
  • 50 ml water (for the syrup)
  • 4 sprigs fresh rosemary (2 for the syrup, 6 for garnish)
  • Ice cubes as needed

How to make a Paas Spritz with orange and rosemary?

    1. Juice one orange and set the juice aside. Slice a few thin rounds from the second orange for garnish.
    2. Make a simple rosemary sugar syrup: heat 50 ml water with 50 g sugar and 2 sprigs of rosemary in a small saucepan over medium heat. Stir until the sugar dissolves, let steep gently for 3 minutes, then remove the rosemary. Let the syrup cool.
    3. Fill each large spritz glass generously with ice cubes. This keeps your drink cold without watering it down too quickly.
    4. Add per glass 60 ml bittersweet orange liqueur, followed by 30 ml fresh orange juice and 10 ml rosemary sugar syrup.
    5. Top up the glass with prosecco (about 80 ml) and then a small splash of sparkling water for extra freshness. Stir once gently so the bubbles remain.
    6. Garnish each glass with a slice of orange and a fresh sprig of rosemary. Serve immediately and enjoy.
