This airy omelet wrap with banana and egg is ready in a few minutes and finished with creamy Hüttenkäse and fresh red fruit. A delicious, healthy breakfast that also looks great.

Ingredients

  • 1/2 banana
  • 2 eggs
  • splash of coconut milk
  • small tub of Hüttenkäse
  • red fruit of your choice
  • coconut oil
  • sea salt

Breakfast omelet wrap with fresh fruit & Hüttenkäse

    Mash the banana with a fork in a bowl. Crack the two eggs over it and whisk with the fork until bubbles form. Add a small splash of coconut milk and a pinch of sea salt and whisk again. Heat some coconut oil in the pan and pour in the mixture. Make sure the heat isn’t too high and be patient. When you fold the omelet and see it has a nice color, cook the other side. Once it’s done, place it on a plate, spread it with Hüttenkäse and finish with fruit. Fold or roll and enjoy!

This omelet wrap is a lovely way to start your day. The banana gives a natural sweetness, so you don’t need sugar or sweeteners. Use whichever red fruit you like or what’s in season.
