Equipment

  • Baking dish
  • Frying pan
  • Wooden spoon or spatula
  • Grater (for cheese)
  • Knife and chopping board
  • Oven gloves

Ingredients

  • 200 g tortilla chips (plain or lightly salted)
  • 300 g minced beef
  • 2 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 1 can black beans (400 g), drained and rinsed
  • 200 g grated cheddar (or spicy Mexican cheese blend)
  • 1 handful cherry tomatoes, halved
  • 2 spring onions, sliced
  • 1 tbsp pickled jalapeños (more to taste)
  • Salt and pepper to taste
  • A splash of sunflower oil
  • Guacamole, sour cream and salsa (to serve)

Hoe maak je een lekkere nachoschotel uit de oven?

    1. Preheat the oven to 200°C (conventional oven).
    2. Heat a splash of oil in a frying pan over medium heat. Crumble and brown the minced beef and season with the taco seasoning, salt and pepper. Add the tomato paste, stir well and fry for another 2 minutes. Set the pan aside.
    3. Spread half of the tortilla chips in an even layer over the bottom of the baking dish.
    4. Spoon half of the minced beef mixture over the chips. Then scatter half of the black beans and half of the grated cheese on top.
    5. Repeat with the remaining chips, beef, beans and cheese so you get nice layers.
    6. Slide the dish into the oven without a lid and bake for 10 to 12 minutes, until the cheese is golden and melted and the edges of the chips are nicely crisp.
    7. Remove the dish from the oven. Scatter the jalapeños, cherry tomatoes and spring onions over the top.
    8. Serve straight away with guacamole, sour cream and salsa in small bowls on the side. That way everyone can help themselves and start sharing and tasting.

A large baking dish is really the key here. You want enough room for good layering so every chip ends up covered in cheese and filling. Glass baking dishes are ideal: you can see exactly how the cheese melts and the dish goes straight into the dishwasher afterwards. Smart and no-nonsense, just as it should be.

Want to vary it? Swap the minced beef for pulled chicken or leave the meat out entirely for a vegetarian version with extra beans and roasted peppers. Add a ripe avocado to your guacamole for extra creaminess and put everything on the table for a moment people will remember.
