Saying that burgers can only be made from meat is, of course, complete nonsense. A good hamburger is delicious, but have you ever tried making burgers from chickpeas, for example? Also super tasty! When I saw this little recipe on ZTRDG, I immediately knew I wanted to share it with you. It's something a bit different: a well-filled, spiced burger on tasty bread, finished with ketchup. And coriander for a herby twist. Make these burgers when you're craving a special lunch, or cook them on the BBQ. Perfect for a summer evening!

Homemade green burger on ciabatta bread

This homemade green burger is made from potato, fava beans and spinach and is served on sturdy bread with crisp lettuce and polderketchup. A delicious vegetarian meal that's quick to the table.

Ingredients

  • 150 g potato
  • 150 g fava beans, double-shelled
  • 1 shallot
  • 1 garlic clove
  • ½ tsp ground cumin
  • 100 g fresh spinach
  • ½ beaten egg
  • 20 g breadcrumbs
  • 4 slices pain de campagne or other sturdy bread
  • lollo rosso or other lettuce of your choice
  • polderketchup
  • 1 bunch coriander

Green burger on ciabatta bread

    1. Peel the potato and cut into small cubes. Cook together with the fava beans in salted water for about 5 min until tender. Drain and set aside.
    2. Heat oil in a frying pan, finely chop the shallot and garlic and sauté them briefly with the cumin powder, then add the spinach and let it wilt briefly.
    3. Take a cutting board, place the potato, fava beans and the spinach mixture on it. Chop the mixture finely with a cleaver.
    4. Make a well in the center, add the egg and the breadcrumbs and knead into a sticky mixture. Taste and add more salt if needed.
    5. Form 4 burgers and fry them until browned in a frying pan over medium heat.
    6. Toast the bread, top with lettuce, the burgers, ketchup and coriander.

These green burgers are a great way to eat more vegetables in a tasty way. The combination of fava beans, spinach and cumin gives the burgers a full and spiced flavor that pairs well with the fresh coriander and the ketchup.

Got leftovers? Store the cooked burgers in an airtight container in the fridge and reheat them the next day in a frying pan. You can also freeze the burgers before frying them, so you always have a quick meal on hand.
