When the weather allows, you’ll find me on a cozy terrace enjoying lunch. I often choose a salad. These days you can find a goat cheese salad on almost every menu. I always enjoy discovering everything that’s in the salad I’m served. I like inventing my own variation on the recipe at home.

Today it’s time for a tasty goat cheese salad!

This delicious goat cheese salad combines fresh field greens with sweet apple, crunchy walnuts and creamy goat cheese. With a simple honey and balsamic dressing, this salad is ready in no time.

Ingredients

  • Mixed field salad leaves, as needed
  • ½ cucumber
  • ½ apple
  • A handful of walnuts
  • Goat cheese
  • Optional: broccoli sprouts
  • For the dressing:
  • 1 tbsp mayonnaise
  • 1 tbsp olive oil
  • ½ tsp balsamic vinegar
  • ½ tsp honey
  • ½ tsp mustard

Delicious goat cheese salad with a sweet twist

    1. Cut the cucumber, apple and goat cheese into pieces. Put the greens in a bowl and add the chopped ingredients. Break the walnuts into pieces and scatter them over the salad.

    2. Mix the mayonnaise, olive oil, balsamic vinegar, mustard and honey together until you have a dressing, then pour it over the salad.

    3. Finally, for an extra boost of vitamins and minerals you can finish the salad with some broccoli sprouts. Enjoy!

This salad is a perfect light lunch or a fresh side dish for dinner. The combination of sweet apple and savory goat cheese provides a lovely balance of flavors. Feel free to add extra vegetables to your liking.
