Sometimes recipes come together spontaneously, like these 'sandwiches'. It was lunchtime and I was just about to pop to the supermarket when it started pouring. The shop is around the corner, but I'd have been drenched in those few metres. That wasn't going to happen! Still, I fancied a nice healthy lunch. So: fridge open and see what I had. Little gem lettuce, some tomatoes, Greek yogurt… I could work with that. The result: crisp lettuce leaves as 'sandwiches' topped with a fresh tuna salad. Delicious! And very healthy =D

Healthy lunch: Lettuce sandwiches with fresh tuna salad

A super-quick and healthy lunch where crispy little gem leaves are filled with a creamy tuna salad made with Greek yogurt, capers and horseradish. On the table in minutes and wonderfully fresh in flavour.

Ingredients

  • A few little gem lettuce leaves
  • a can of tuna (I use line-caught tuna in olive oil)
  • 2 tbsp Greek yogurt
  • 1 tbsp capers
  • 1 tomato
  • a piece of cucumber
  • 1 tsp prepared horseradish (from a jar)
  • salt and pepper

Healthy lunch: Lettuce sandwiches with fresh tuna salad

    Wash the lettuce, tomatoes and cucumber. Lay some lettuce leaves out on a plate, cut the cucumber and tomato into pieces and place them on the lettuce. In a small bowl add the tuna and stir in the yogurt, capers and horseradish. Season to taste with salt and pepper. Spoon a generous dollop of tuna salad onto each leaf. Your super-quick healthy lunch is ready!

These lettuce sandwiches are a delicious low-carb lunch you can have on the table in no time. The combination of creamy yogurt, spicy horseradish and briny capers makes the tuna salad extra flavourful.

Vary to taste by adding extra vegetables, such as bell pepper or avocado. Preferably choose tuna in olive oil from sustainable fisheries for the best flavour and a more conscious choice.
