Equipment

  • Food processor or blender
  • Flat plate

Ingredients

  • 10 large Meidjool dates
  • 50 g cocoa powder
  • 30 g almond flour
  • 1 tbsp maple syrup
  • topping of your choice: walnuts, almonds, coconut flakes but goji berries or puffed quinoa are also tasty

Date bites with cocoa and nuts

    1. Pit the dates and put them in the blender with the cocoa powder, almond flour and maple syrup. A blender with blades that also point downwards works well; if you don't have one, use a food processor or a large chopper. Blend until you get a thick, sticky mass. Chop the nuts finely and arrange the toppings on a plate.

    2. Now form little balls from the 'dough' and roll them through your favourite topping. You can also mix different toppings. Let the balls firm up in the fridge for about fifteen minutes and then eat them all at once! Oh no 😉 They actually keep quite well in the fridge because there's nothing perishable in them. Tip: make enough for the whole week and take them with you (or send them with your kids) as a tasty, sweet and healthy snack.

You can easily store these date bites in the fridge for a whole week. They don't contain any perishable ingredients, so feel free to make a big batch to enjoy all week.

Feel free to vary the toppings to your heart's content: walnuts, almonds, coconut flakes, goji berries or puffed quinoa each add their own flavor and crunch to this tasty snack.
