Are you a creature of habit too? I must admit I am. I usually choose convenience in the morning, and it quickly becomes oatmeal every day. Inspired by the book from the trendy vegetarian, I make a delicious banana bread for a change.

Besides being very tasty, banana bread is also super healthy! You can vary the ingredients to create your own favourite. I opted for a gluten-, lactose- and sugar-free banana bread. Since I still had an unopened pack of rice flour, I was curious how the loaf would taste made with it. I'm also experimenting with gluten-free eating, so that worked out well!

If you manage not to eat this delicious loaf within a week, you can easily freeze it in slices. Always handy when you have little time and still want a healthy breakfast on the go, or to serve with coffee/tea for unexpected guests.

This healthy banana bread is made with rice flour, ripe bananas and dates as a natural sweetener. Perfect for a nutritious, gluten-free start to the day.

Ingredients

  • 250 g rice flour
  • 3 large bananas
  • 3 eggs
  • 100 g pitted dates
  • 3 tablespoons coconut rice milk
  • 2 tablespoons flaxseed
  • 50 g desiccated coconut
  • juice of 1/2–1 lemon
  • 1 teaspoon vanilla extract
  • a handful of blueberries
  • 2 teaspoons baking powder
  • pinch of salt

Healthy start to the day: delicious banana bread

    1. Grease a loaf pan and preheat the oven to 180°C.

    2. Mix the rice flour, flaxseed, baking powder and salt (dry ingredients) together in a bowl.

    3. Next, blend all the wet ingredients (banana, dates, egg, milk) in your blender or food processor until smooth. Slowly add the dry ingredients until a batter forms. Then add the lemon juice, desiccated coconut and vanilla extract and briefly mix them in. Finally add the blueberries; fold them into the batter by hand.

    4. Pour the batter into the loaf pan and bake the banana bread for 60 minutes, until golden and cooked through. To check if the bread is done inside, insert a skewer into the loaf. If the skewer comes out clean, your bread is a success!

This banana bread is delicious for breakfast or as a snack. The ripe bananas and dates provide natural sweetness, so you don't need any extra sugar. Store the bread in an airtight container and it will stay fresh for several days.

Vary to your taste by replacing the blueberries with other fresh or dried fruit. A handful of walnuts or pumpkin seeds in the batter adds extra crunch. That way you can make a slightly different version of this healthy banana bread each time.
