Ingredients

  • 4 thick slices of muesli bread
  • 250 g ricotta
  • 1 tsp vanilla paste
  • Zest of 1 lemon
  • Pinch of salt
  • 4 fresh figs
  • 40 g walnuts, roughly chopped
  • 3-4 tbsp runny honey
  • Fresh mint or thyme for garnish

How to make toasted muesli bread with ricotta and honey?

    1. Cut the muesli bread into thick slices of about 2 cm.
    2. Toast the slices in a toaster or on a grill pan until they are nicely golden and crisp.
    3. Meanwhile, mix the ricotta with a pinch of salt, the grated lemon zest and one teaspoon of vanilla paste. Stir well until light and airy.
    4. Cut the figs into quarters. Don’t have fresh figs? Use dried figs cut into strips or substitute with slices of pear or strawberries.
    5. Spread a generous layer of the ricotta mixture on each toasted slice of bread.
    6. Top with the fig quarters and scatter a handful of walnuts over them.
    7. Drizzle generously with honey and finish with a few leaves of fresh mint or thyme for an aromatic finishing touch.
    8. Serve immediately. Put everything on the table and let everyone help themselves.
