Thick slices of brioche soaked in a creamy egg mixture, golden-brown fried and topped with tender pear slices and cinnamon sugar. Fast, tasty and a lot more special than an ordinary slice of bread.

Ingredients

  • 4 thick slices brioche (or sturdy white bread)
  • 2 ripe pears
  • 3 eggs
  • 100 ml whole milk
  • 1 tsp vanilla extract
  • 1 tbsp granulated sugar mixed with 1 tsp cinnamon (cinnamon sugar)
  • Juice of half a lemon
  • A pinch of salt
  • 30 g butter (for frying)
  • 4 tbsp crème fraîche (for serving)

How do you make French toast with pear and cinnamon sugar?

    1. Slice the pear thinly and drizzle with lemon juice so the slices don’t turn brown.
    2. In a wide bowl, beat the eggs with the milk, vanilla extract and a pinch of salt. Mix well.
    3. Dip the brioche slices one by one into the egg mixture. Let each slice soak for 20 to 30 seconds per side so the mixture soaks in well.
    4. Melt a knob of butter in a frying pan over medium heat. Fry the slices 2 to 3 minutes per side until nicely golden brown. Work in batches and add more butter if the pan gets dry.
    5. Fry the pear slices in the same pan for about 2 minutes over high heat until they lightly caramelize. Sprinkle the cinnamon sugar over them halfway through.
    6. Place the French toast on a plate, arrange the pear slices on top and add a spoonful of crème fraîche. Optionally sprinkle with extra cinnamon sugar and serve immediately.

A good frying pan really makes the difference with French toast. You want a pan that distributes heat evenly so each slice browns uniformly, without burnt edges. Choose a sturdy pan with a good non-stick coating, and you’ll enjoy it every weekend morning.
